Cultured-Dairy
A small amount (about 1/10 of a gram) of FOS (Fructooligosaccharides) serves as a prebiotic substrate to help LRDR™ thrive. However, to make cultured-dairy, an entire tablespoon (about 13 grams) is necessary.
Mix contents of 1 capsule/sachet into a pasteurized dairy base (half-and-half) or non-dairy base, plus 1 Tbsp inulin per quart. Incubate ~100°F for ~36 hours. Results vary by ingredients and process. Full recipe at oxiceutics.com/blogs/recipes.
Add ~1 Tbsp (≈13 g) of prebiotic fiber (e.g., inulin/FOS) for each batch to support fermentation.
Some people have challenges while attempting to make the cultured dairy ( and some don't). While making cultured dairy is simple, there are a number of things that might go wrong.
We recommend the following steps below:
- Proper storage of the microbes is important. Store in a cool, dark place or the refrigerator.
- Be sure to clean utensils, bowls, containers, and surface areas to avoid contamination.
- Organic ingredients are preferred.
- You must add 1 tablespoon of prebiotic fiber (inulin, FOS, acacia gum, raw potato starch) in each 1-quart batch.
- Use whole-fat, ultra pasteurized, half and half dairy (or mix half whole-fat milk and heavy cream).
- Ferment for 36 hours at 100°F with a yogurt maker or sous vide, or multi-cooker.
